The character would be a wanderer, he would travel from town to town, explore caves, dwemer ruins, hear the last gossips and rumours in taverns. Skyrim is about exploration after all and sometimes its just refreshing to not have a specific goal. Ive never played a competitive jack of all trades before.
Huh, this is quite what I did with The Greenskin. Thieves Guild was one of my objectives, but the adventuring around Skyrim, looking for treasures with my trustworthy (though dim-witted) barbarian follower Erik the Slayer was my daily bread and butter.

Or Noodle's The Thief is great for this.

One of the darkest, most enjoyable playthroughs I've had is with Henson's Necromancer. It uses the ritual stone on the Aetherial crown glitch to summon hordes of dead to do your bidding. pretty choatic when you've got a dozen followers wrecking towns...etc

Take a look at John LeBlanc's Tombcrawler. lotta good stuff in there, especially thick with Khajiit lore and RP.
Edit: Also, for a classic and well done explorative merc, check out Karver's Goldpact Knight.

My Poison Widow is probably the darkest build I've ever played. The Chirurgeon has a fun "mad scientist vibe" that I also really enjoyed with a character profile to help you get more into his twisted mind. Niether is particularly chaotic but they are both dark.

What is your best recommended build for a kill everything run? Assassin-y, and not a glass cannon (just so i could survive when trying to kill things that hit like a truck, i.e. Giants or Dragons)?
