Well, I own both Morrowind and Oblivion GotY´s hard copies and I have no problems on my computer (quite advanced machine if you ask me).
If you´ll buy it on Steam, you shouldn´t be worried. It works just fine and if your computer is stronger, I would advise downloading graphics mods.
I´m talking about Morrowind and Oblivion, I haven´t tried to run the older ones on this comp and I don´t really plan to. But MW and OB work just fine.

Official Site link discussing recommended mods. Steam is addressed near the end of the first post. I just came across this.
Without reading the whole thing, here's the section re: Steam;
Info for using mods with the Steam version.
All mods, patches and tools work... but you will need to do a few simple things to ensure they do.
- You need to redate the BSA files of Morrowind and both expansions. Simply running the Code Patch once will do this for you.
- You need to disable the Steam Overlay for MGE to work. Uncheck the "Enable Steam Community In-Game" in the Steam properties for Morrowind.
- If you want to make/edit your mods, you need to use This Fix for the Construction Set to work properly.
- If you're on Vista or Windows7, see the above section that applies to you.
- Info on how to move a Steam installation here.

Actually, I´ve been thinking about that lately.
Remember that Recommendation quest in Anvil? It gives you two battlemage followers and I think it would be possible to let them follow you if you managed to avoid the Gold Road near Gottshaw Inn. Haven´t tested it myself yet, but it could be possible.
Then of course you can have Adoring Fan.
Followers And I think this might help you a little bit.

Frankly, best followers come from Battlehorn Castle or by becoming leader of Dark Brotherhood, Knights of the Nine or Mage´s Guild.
Shame you can´t hire anyone in Fighters Guild. Dumb...

Burden adds encumbrance weight to the target, NPC's don't carry very much, so you'd need a fairly high magnitude. You could combine it with Weakness to Magic (which increases Burden's magnitude on affected targets) or Drain Strength (lowering their maximum carrying capacity) effects to try making it easier.
Paralysis is much easier to use if you want to stop enemies in their tracks.

I found that Damage/Drain Speed works much better than Burden. It´s quite easy to lower NPC´s Speed to 0, which means they literally can´t move. Same goes with Strength, but they usually have more Strength than Speed.
Otherwise than that, just like Chris says. You´d need high magnitude of Burden and because the max Magnitude you can get is 100, it ain´t much, even with Weakness to Magic.
Frankl, it´s better to Drain/Damage their Speed or Strength.
