How to deal with enchanting Roleplay-wise?

This is incorrect. Black soul gems are unable to hold white souls of any kind. It's not that they're a waste to use on white souls (though it would be, were it possible), they actually can't hold them, just as a white gem cannot bear a black soul.

"Black Soul Gems are a special type of soul gem that, unlike conventional ones, can contain both black and white souls."

Now that's specific to Skyrim's game mechanics. In the lore it is however mentioned aswell that black soul gems are capable of holding lesser souls and even parts of souls.

"If the gem is not precisely the size of the encased soul, small bits of the caster's soul may leak into the gem when it is touched."

What I also find interesting in this in-game book is the first line "The nature of the soul is not knowable."
There are plenty of conflicting idea's on the nature of souls in Elder Scrolls lore which on itself would appear to strenghten that statement.
With so much information provided, we can make many educated guesses though.
Still without confirmation of the people writing the rules of this universe, we can never know for certain.
(They sure do get a lot of people involved by providing just enough information.)

Yeah i was about to say that i captured countless white souls in Black gems, mainly by accident ^^

Dropping them releases the Soul in Skyrim is that intentional or a bug? because i Remember Neloth Chewing his apprentice through because he filles a Grand Gem with a lesser Soul :D

As with many many things there is a gameplay way to look at things and a lore way.
In the lore all soul gems 'break' when the energy of the soul is used (aka leaves the gem) (with the exeption of Azura's Star).
So my guess would be that this is reflected in the characters dialogue and the grand soul gem of your example is indeed 'wasted'.

Gameplay wise, I do seem to recall reading it is unintentional, but due to 'popular demand' neither official nor unofficial patches have 'fixed' the issue.
(If desired can try to find sources for it again.)
For roleplay I don't actually use the trick myself, it adds another mini-resource-management element and to my knowlegde could possibly break lore otherwise. (For someone who uses 100+ mods and console commands I can be very picky when it comes to lore/immersion breaking stuff.)
