There is a "Required Quests" section if that's what you're looking for, but other than that, you can do whatever quests you want. With regards to the Dawnguard DLC, I would side with the vampires and then betray Harkon with Serana so that you kill both members of the Dawnguard as well as the leader of the Vampires.

Hi Magnus; what Dragonborn means is that the armor is named after you pick the enchantments for your armor, boots, gauntlets, etc. What armor you choose to enchant is up to you.
Ex. I can enchant Blue Robes with the listed enchantments in the build and give it the name "Robes of the Reaper."
