And absorption is useful for non-mages too. You're literally ignoring 50% of all incoming magical damage. With the two Thalmor in the picture, that's over 8 damage per second if they're each single casting Flames.

The magicka ABSORBED is not useful for non-mages but the protection certainly is.
My point still remains though; if a Breton's Dragonskin didn't last long enough for the fight or was already used a Breton wouldn't be any better off than an Argonian.
