The new baked items added by Hearthfire, I think you need the kitchen for that. I've never seen them sold at general stores or inns.
The Main Hall can have a few bookshelves in it, but the Library is the only wing addition with bookshelves.

Does using Wax Key to get a key to a place enable you to enter that place without it being trespassing?
Yeah, it would still count as trespassing, I mean using keys in general does and having the copy doesn't change that. Would've been an interesting perk if it did allow you to break in without it being trespassing. Would've loved that, but yeah just not the most useful perk the way it works.

1) How many forks are in the game? (even stealable ones count here)
2) Just how effective is Telekenesis + a Fork as a method of fighting?

Nope, has to be grand soul gem. Also has to be a pre-filled Grand soul gem, either purchased from vendors of found randomly.
The items have different IDs, the game won't consider them the same for crafting recipies.
