Any of the Hall of Fame Witchhunter builds are fantastic (The Demonhunter by No Snakes Alive is by far one of the most popular, and you'll find it at #1 on that list). Many of these builds are currently without images (the Restoration Team is hard at work to fix this), but the content is still awesome even without them.

In addition, Lozhar and my Keeper of the Dead focuses entirely on hunting the undead, necromancers, and dark mages.

The Horseman by Ponty is sounds perfect, it's open in terms of RP and all that, and uses a smash-oriented method of combat that isn't used much.

One of the builds that came to mind first was the work done by Edana and Legion developed together. Beautiful backstory and way to play.

If you are alright with mace and board, I have a build that can handle Legendary and probably some difficulty mods, despite the fact that it only features limited crafting. A different take on the Dwemer race.
