Well why not. Enchanting is the best thing about Oblivion/Morrowind.
Enchant your items with anything you want, create Hoods of Suicide if you want, the possibilities are endless.

That´s true. But to be honest, I have absolutely no idea how to make an Event around that.
Enchanters. "You can rely only on Enchanting, but no magic"? Or something like that. Morrowind fares much better in this than Oblivion, considering you can create enchantments that let you cast spells.

Well...not really, I mean it is a tad limiting but I think it could create some kickass characters. For instance if you did Assassins, we'd have 2 normal Assassins, a Magical Assassin and then my character, an Enchanting Assassin (who uses Enchanting a lot).
It does limit us, but at the same time it really gives us a chance to do something amazing with a simple concept. So it's a pretty good idea in my opinion.

Enchanting Classes.
Each participant picks a Class and instead of perking it's skills, creates a character from that class using only Enchanting (And maybe one other skill)

If I´m getting this right, you mean:
I pick a Barbarian for example, but I won´t be increasing it´s skills, but rely on Enchanting to raise those skills instead. That´s what you meant? If not, than you have to explain it little bit more for me
Also, note that Enchanting isn´t a Skill in Oblivion.

Hm. True, little bit limiting. So how about giving people an option to choose between two "Classes/Archetypes"?
Like: "Character Building Event: Knigths and Assassins"

Factions were good, and while it wasn´t original, the results speaks for themselves. It suited people well to join the Event, so it has it´s pros and cons.
Yeah, we have plenty of time to figure out what kind of Event we would like to do. So plenty of time to toss ideas around here.
