My advice would be to take one crafting skill per character. You can always join a guild or make friends with other players to work out a mutually beneficial system, where you can get everything you need.
'I'll make you a suit of armor, if you make me a set of enchantments for mine.' Or something to that effect.
As for provisioning, it can make a huge difference to gameplay, so definitely jump in early if you plan to do it. However, even if you have no one else to play the game with, you can go into inns and buy some basic food and drink for very little gold.
