I can understand that, and yes it is definitely possible to focus on only 3 forms with one set of equipment. Of course, that would allow you to go with a completely different stone, as that is the main reason for the steed. I'd recommend the lady, and have the lord in the crown.
One possible set-up is as follows:
Forms: Spellblade, Guardian and Scholar.
Enchantment Set: The Spellblade.
This set-up is ideal, given that the Spellblade set gives bonuses to both one-handed and magic, making it perfect for a universal equipment loadout. Although there are no block enchants on the Spellblade set, you could always either tinker with it some or go with the Marauder instead of the Guardian.
Of course, you could do some tinkering of your own and come up with a new combination of forms that works with one universal equipment loadout, but this would be the most well-rounded one.
I was debating with myself whether or not to include the idea of having universal set-ups within the write-up itself, but ultimately decided not to for fear of it becoming too long (Somehow, I've still managed to achieve that :D)..
