That's what I figured. I want to be able to solo veteran dungeons (late game obviously), but I couldn't really figure out which of the two has the better survivability in that kind of situation.

Either magicka or stamina sorcerers can solo dungeons and bring unique survivability skills. The stamina sorcerer has an ability called, Critical Surge (the stamina morph of Surge). Crit Surge, while active, will heal you for 2700 health for every critical strike you make. Not only will this apply to weapon strikes, but it also works in conjunction with the ability, Hurricane (stamina morph of Lightning Form), which is a huge AOE that surrounds the player. Every tick of hurricane can proc a critical strike, which in turn, can proc a heal. As you can probably tell, the stamina sorcerer is rewarded for in-your-face, rapid, brutal melee attacks. It's the ESO version of a spellsword (a warrior who augments his/her martial prowess with magical abilities).
The magicka sorcerer, on the other hand, has a small healing ability through Power Surge (the magicka morph of Surge). But, the chances of landing a critical strike may be less than a stamina sorcerer due to different skills and passive abilities. However, the magicka sorcerer has access to at least three shields: Conjured Ward (a sorcerer skill), Annulment (a light armor skill), and Healing Ward (a restoration staff skill). In reality, if you are soloing vet dungeons, you will likely use only one (maybe two) of these shields due to limited bar space. Conjured Ward is very, very strong (even stronger of you put champion points into "Bastion"). Annulment is also strong but it also can be morphed into Harness Magicka which provides a decent shield that absorbs some of the magicka attacks, which helps to replenish your magicka pool. The magicka sorcerer is rewarded for ranged, defensive gameplay.

Ah yeah, I've heard about crit surge. That ability is a beast. I watched a couple videos on it and it's almost impossible to die as stamina sorc with crit surge as long as you know what you're doing. Hey Patriarch, what is your recommended way to level crafting effeciently? I've gotten my templar to cp 110, but I want to be able to craft him some epic gear when I get to cp 160. Most of my main equipment crafts are at or around lvl 20 and I have around 4 to 5 traits researched for most of the gear I would need but I haven't really found the most efficient way of going about it and getting them maxed out.

Wow, Josh. Sorry I missed this question.
The best way to raise your crafting level is to decontruct, literally, everything you find. If you have the extra coin, you could ask for someone to craft (or buy at a guild trader) high level gear for you to deconstruct.
