Doing this quest will also make it so that taking items won't count as stealing. Could be handy, since that quest takes all of two minutes with no combat necessary.

I tested it out, and it does work. However, it's the same type of situation as when you're friends with an NPC: You can take the cheaper items with no worries, but anything around 40+ coins will still be considered stolen (there are a handful of potions and a few fine clothes in there). However, as you noted already, there's no one around to actually witness your "crime" so it's not a huge deal.
