My influence-seeking Argonian character secretly worships Hermaeus Mora, but I'm having trouble thinking of 1) his rationale for thinking Mora could help him become influential and 2) a day job. I'm thinking a hunter/enchanter who gets money for soul gems by selling animal hides, who indirectly "sells" knowledge by selling enchanted items (because enchantments are powered by souls, which presumably contain memories), but I’m not sure if that would fit a disciple of the Daedric Prince of Knowledge or if I’m stretching it.

If your argonian desires influence, you could look at how much power and influence, (which is exactly what you're looking for), Mora grants to his followers. Just look at Miraak. He served under Hermaeus Mora and in turn he gave him the power to influence almost an entire island to do his bidding, not to mention the power to split that same island off completely from skyrim. If that's not enough, your go-to would be worshipping Clavicus Vile. as for a day job, the most obvious would be a librarian or mentor. perhaps you go to the college of winterhold seeking to spread your influence by teaching or looking through tomes, and you're eventually pointed to septimus signus which could be where you first come into contact with Herma-Mora.

I want to Roleplay an Acrobat/Thief, I understand the "Steal over kill" rule, but I always feel like I'm stealing stuff to make money with no rhyme or reason. What do you guys think?

Unfortunately, the game doesn't offer much structure for stealing outside the Thieves guild. Everything you do will be 100% RP. So you can treat one or two merchants as go-to fences/clients to sell stolen goods to, or steal from the rich and give to the poor, but that's about as far as you'll get with character interaction. Another route is some kind of eccentric collector thief.

Hey so not sure where else to turn.... I want to roleplay a battlemage/Druid combination and have no idea where to start.. I got all my survival mods working and I know what I want to use (bound sword/atronachs/robes/alteration magic) but I cannot decide if I should run him as a war mage or a guardian of winterhold (after college quest) or what.... Sorry if this is the wrong place to ask this!

Druids are normally guardians of nature, so I can imagine him living in a shack and surveying the area for natural threats, but I'm not 100% sure.

I'm not exactly a roleplay god

Yeah torn between a Druid and a Spellsword/Battlemage as lore states Druids use staffs and clubs which I can't get

Mods, Requiem allows to become mage without ever entering city, adds clubs and staffs.

Lore weapons expanded adds only weapons

I'm planning for him to study at the College at a certain point, but before I got that far I randomly decided he didn't like the cold (he had a run-in with a frost wraith)
