I want to roleplay an imperial soldier, but I don't know if it would be appropriate for a low ranking auxiliary to wear imperial heavy armor. I know we're given the option by Beirand when we join the legion, but I only ever see imperial officers wearing the heavy armor. Does armor always correspond with rank in the legion?

To your question - yes and no. Officers can and often do wear differing apparel for outward appearances but most of the time the apparel chosen is fitted to the type of soldiers needed, area of deployment, climate, etc. A lot of reasoning is that the Legion willingly uses the surrounding culture and soldiers from the specific province to outfit their troops.

Morrowind had differing types of armor and equipment, Cyrodiil had stationed guards for protection, and Skyrim was more lightly armored troops for skirmishing/Civil War utilizing leathers and furs.

I would think that if your character was going to be role played as a lower ranked Legion soldier, the armor would still need to fit the accessability, preference, and comfortability of the soldier. The option to choose which type may in fact just be a simple gameplay mechanic to broaden the acceptance of skill usages (so plays well into the use anything, be anything role the game creators put in) but it also plays well to the lore. They want your character what would be more comfortable and be more successful in traveling the harsh cold and mountains of Skyrim.

I'm keeping an RP journal, but I keep forgetting to write stuff that my character would definitely find worthy of writing down, like "Faralda suggested I visit Runil for Conjuration training". Also, I keep forgetting to switch my mindset when the character switches identities. Is it just a matter of willpower on my part?

Honestly the only way to do this consistently is to make is to keep forcing yourself until it becomes second nature. It might take you out of character to remind yourself to write down stuff, but eventually it'll become part of you character's experience, and so yours. It helps if your character is more scholarly as they're more likely to write stuff down. Maybe trying to write more in the 'voice' of the individual might help with this process.

I don't know which game system you play on, but for PC there's a mod called "Take Notes - Journal of the Dragonborn" (for Legacy and in alpha for SSE) that allows the player character to create a journal in-game. I haven't use this myself (I'm very new to modding and haven't yet downloaded SkyUI or SKSE) but know of people that have enjoyed using it.

Can confirm this. My Scholar took sketches of the signs of Inns and the Insides of Nordic tombs. At first its weird and i forgot it some times but after a few days of gameplay i was exited to expand my Research book with new sketches and small descriptions ^^

So I am just about done with playing Skyrim until i get my PS4.

So for my last Character i wanted to make a Stealth character but its laughable how easy and overpowered Stealth is.

So my Question is how can i spice it up with a few tricks to make it less boring.

You could use skills that do not necessarily match up perk wise with sneak. So don't use daggers, bows, or illusion. Use one handed weapons, two handed weapons, and destruction?

If you really want to make a stealth character but you acknowledge it is boring and overpowered why do you want to make a stealth character?

Don't raise health? ; )  I found excitement in my Stealth build with the concept that my dunmer was her weapon., and she became a Tool. I used one hand dagger (never dual wielded) + destruction, also illusion for defence.
