I'd like to really play a fun class on a hard difficulty with a lot of the stuff dragonborn adds in. I've never played dragonborn before but I know it's got lots of cool spells. So I'm thinking destruction.

Is it that impossible without hiding behind spells and the like?

try conjuration + archery + sneak, you may also want to use daggers.

Using everything... But your priority, IMO, should be archery sneak shot, conjuration spell OR illusion spell depending on usefuness, shield and sword, then powers and potions or healing if ur dying.

As for a specific class, you can just look for the better builds that describe themselves as overpowered but I definitely suggest a magic-enhanced archery build. Demonhunter is an obvious choice. Keep enemies away from you with staggering shots, slowing poisons, frost magic, and summoned allies.

If you want to play on legendary, Conjuration could be a big help as the summoned beings do not suffer from difficulty penalty, they deal and receive only 100% damage.
