    Has anyone accomplished this?

You need to use Boot Camp in order to create a Windows Partition on your main drive. After creating the Windows Partition and booting into Windows, then you can install and play Skyrim.

Thanks. Do you have a recommendation for which Windows?

I run Windows 7 on mine, but I've heard Windows Vista is just as good. Do NOT use Windows 8 (from what I hear, it's awful).

Can you use mods on Mac?

I did it slightly differently, with Wine using a port from the porting team website. I can use mods just fine as well.   But Emer's method is certainly easier and more secure - I had to muddle through and fix a whole bunch of things that weren't in the instructions included with the port.
