I'd like to know a little more about the Nirnroot, I've read some books and such about it but nothing really helpful. I'm sure there's someone awesome enough on this website to help me out?

The Nirnroot Missive (both Oblivion and Skyrim versions) are the only canon lore books I can think of. You can also check the Imperial library, perhaps there will be more information, just keep in mind that a lot of articles there didn't find place in any TES game or novel.

I agree with the imperial library despite that last part, their articles seem to be acknowledged as credible by most people. Link: Imperial Library

Asking one of our resident lore masters might also be a worth while venture

I meant, that I don't consider them canon. For me the canon are the sources from TES games and official novels like Infernal City. The articles in the Imperial library certainly present wonderful and creative theories, but they are just that - theories (I especially like the connection between giants and Nords).
