It's the difference in play styles, Bloodborne encourages aggressive tactics while Dark Souls (and Demon Souls) encourages more defensive tactics. Because you can block boss attacks they are immediately easier then the unblockable bosses of Bloodborne. They also both punish you for picking the wrong time to attack which is really where the difficulty of the series stems from.

Can't tell how difficult they'd be otherwise so no comments on the actual difficulty of the fight. On my main playthrough (Hybrid) I've had by far the most difficulty with uh...honestly Havel the Rock has been my hardest opponent but boss. Oh shit the Stray Demon for sure, just couldn't really get that fight properly down.
